Auxiliar de Cocina Fría

About the role

We are looking for a motivated Auxiliar de Cocina Fría to join our catering team serving airlines and airports across Latin America. The role focuses on preparing, assembling and finishing cold‑food products while ensuring strict food‑safety and quality standards.

Key responsibilities

• Prepare and assemble cold dishes according to standard recipes, cuts and client specifications.
• Follow the client’s menu requirements and complete production runs within the assigned Variable Production Schedule (VPS).
• Maintain HACCP records and ensure compliance with food‑safety protocols.
• Monitor and record temperature data in real time during the shift.
• Operate kitchen equipment according to manufacturer manuals and maintenance guidelines.
• Generate First Pass Yield (FPY) reports and apply Lean Manufacturing tools such as 5S and the 10 wastes.
• Support inventory counts when requested by the team leader.
• Wash, disinfect and polish tableware and cutlery.
• Uphold customer‑service standards throughout the shift.

Required skills

• HACCP knowledge and documentation.
• Experience with Lean Manufacturing concepts (5S, waste reduction).
